Holiday Biscotti

Every year around this time, the Food Network sends out e-mails titled 12 Cookies of Christmas. Of course, I sign up to receive these awesome recipes from the Food Networks greatest! 

Yesterday's recipe was Giada De Laurentis' Holiday Biscotti. I've always wanted to learn how to bake biscotti, so immediately I pulled up the recipe to see if it was "doable". Reading through the ingredient list, I realized that I had all of the necessities minus the cranberries and pistachios. A little bummed that I didn't have all the ingredients at home, I continued to read through the reviews. 5-Stars, 5-Stars, 5-Stars, 5-Stars, 5-Stars, 5-Stars. Wow! People really must like these. Then I noticed a review that said the baker substituted the cranberries and pistachios with chocolate chunks. BINGO! I have (had) a bag of chocolate chips in the pantry. 

I got home, tied my apron on that my Mompshy made me, and immediately gathered all of my ingredients for the biscotti. I even added a little fresh nutmeg, cinnamon, and a splash of vanilla. And, I used milk chocolate mixed with a little almond bark to dip the edges instead of white chocolate.


While I'm sure that the original recipe is amazing, I'm pleased to announce that I can confidently bake homemade biscotti! I'm not sure why I was so scared of it... I will be doubling my batch next time!
